Fill a pot with 2 inches of oil.

Clip a frying thermometer to the side of the pot so that the tip is submerged in the oil but not touching the bottom.

Heat the oil to 360°F (180°C).

Slice a pile of tortillas in half through the centre.

Stack the two piles together and cut across the center again to form quarters.

Stack the quarters and cut through to form eighths

Gently drop the tortilla pieces into the hot oil, a handful at a time.

After the initial vapour has boiled off, agitate gently with a slotted spoon to fry evenly

When tortilla chips are golden brown (about 2 minutes), remove with a spider or slotted spoon.
